  Safe Picnic Tips


Have a wonderful picnic -- but be safe

Keeping foods at adequate room temperatures during outdoor meals can help ensure celebrations are safe and delicious. As a general rule, keep hot foods hot and cold foods cold. Here are more things you can do to prevent food-borne illness:

• Take a cooler with ice in it to the grocery store when purchasing perishables on a hot day.

• Do complex food preparation in advance. For example, make your potato salad ahead of time and be sure it’s thoroughly chilled. Rinse, wash and prep fruits and vegetables at home.

• Do not serve cooked meats on the same platter that held raw meats. Keep utensils and cutting boards used to prep raw meats away from cooked food.

• Keep dishes covered with lids or foil.

• Keep hand sanitizer or wipes “on hand” to keep hands clean.

• Put away foods after an hour at room temperature if you cannot keep them adequately cold or hot.

  Roasted Italian Potato Salad

Who knew you could make a potato salad without mayonnaise? This recipe offers a great change of pace for your summer picnics! Serves 8-12

4 lbs. red potatoes, rinsed and sliced into 6-8 wedges each
2 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
3/4 lbs. roma tomatoes, diced
1 small red onion, slivered
4 hard-boiled eggs, chopped
1/4 cup fresh basil, minced
1/2 to 3/4 cup of your favorite Italian salad dressing



Preheat oven to 400 degrees F.
In a bowl, mix potatoes, olive oil, salt and pepper, hen place on non-stick cookie sheet (or parchment paper). Bake in oven 20-25 minutes until browned and tender. Allow to cool, and then mix with rest of ingredients. Add salt and pepper to taste. Optional: add 1/3 cup of shredded (not grated) parmesan cheese.
